A lot of you readers are bound to be talented in the kitchen. It is likely that several people in your life enjoy this food. Don’t you think, then, that other people will enjoy it, too? You should start a restaurant!
Don’t ninety-percent of restaurants go out of business?
Absolutely they do. It is not surprising that most restaurants fail. However, this does not mean that your restaurant will fail, and it does not mean that you should fear it will fail. Just because ninety percent of restaurants fail does not mean you have a ninety percent chance of failing. Most restaurants fail because they are started by incredibly talented chefs. These chefs, most people think, are the best ones to start a restaurant. That’s where most people are wrong, and that’s why most restaurants fail. That’s because these failing restaurants are not started by excellent businessmen. You, of course, are going to be a businessperson.
Haven’t you ever noticed that large restaurant chains often have food that is “just okay?”And, a lot of those restaurants fail, they often have great food. So, if we can learn anything from this, it’s that improving the taste of your food is not the way to improve your restaurants.
So, stop improving your food; don’t make the same mistake that most restaurant owners make. Think about it; if people like your food when you cook at home, then people will like your food in your restaurant. Your food is good enough. Stop worrying about it. You need to focus on the rest of your restaurant.
If you already feel that your food is tasty enough to belong in a restaurant, then your food is tasty enough to belong in a restaurant. Forget the food. Move on to the rest of the business.
Do as many of the jobs in your restaurant as you can. Every job you do is another job that you don’t have to spend the money to hire somebody to do. You’ll eventually want to hire all of them, but now you have limited funds. Do as many as you can.
You want to do as many of the jobs as you have time for. This allows money to be saved and reinvested back into the company. Now it’s time to build an inventory system. You need to keep track of everything! Don’t run your restaurant like you run your home kitchen; you need to systematize everything and write it down. Your company will work if you run it like your kitchen, but it won’t be able to grow.
Next is inventory. Keeping track of everything in your restaurant is important! If you run it like your home kitchen, your restaurant will function, yes. However, it won’t be able to grow much bigger than your kitchen. Make everything systematic. Write everything down.
Next, we need to deal with suppliers. You have to get your food and supplies from somewhere. Find the cheapest supplier; this should be obvious. Don’t be like most restaurant owners and settle with the easiest one; put in lots of time to find the cheapest one.
You can’t expect people to just know about your restaurant and where it is. You have to inform them; you must advertise. Put an ad in the newspaper. Put a commercial on the local radio (if you can afford it). Stay away from television for now; it costs too much to be worth it for your small restaurant.
Every area we have mentioned needs its own system. Systems are critical. Without them, your restaurant will be like all the others. It will either struggle through existence, or it will just completely fail.
If you have weak systems, they will be like cracks in your foundation. The bigger your business gets, the more “downward pressure” it will put on the foundation (the systems). These “cracks” will get bigger with more pressure, and, eventually, they will be too big; your restaurant will then collapse. With a solid foundation, however, your restaurant can grow as big as you can make it. The sky’s the limit!
